How do chefs use Cantabrian Anchovies?

Anchovies on toast

Grilled sourdough, cold cultured butter, three fillets and a few drops of the oil. No cooking, almost no prep, and one of the highest-value plates on a Spanish menu.

Gildas

One fillet, a green olive and a piparra pepper on a skewer: the original pintxo. Or buy them ready-made.

Tomato bread and salads

Over bread rubbed with ripe tomato and olive oil, or across sliced summer tomatoes with onion.

Boards and butters

Next to Ibérico ham and Spanish cheese on a board, or blended into an anchovy butter for steak and grilled vegetables.

Origin

Where do Cantabrian anchovies come from?

They come from the Cantabrian coast of northern Spain, where the anchovy is caught in spring. The fish is cleaned, packed in salt and left to cure for months while flavour and texture develop.

Then each fish is cleaned of skin and bone, split into fillets and laid by hand into olive oil. It is slow work, and it is what gives a firm, clean fillet that can go on the plate straight from the tin.

Buyer questions

Cantabrian Anchovies: frequently asked questions

Do Cantabrian anchovies need to go in the fridge?

Yes. Cured anchovy fillets in oil are a semi-preserve, not a sterilised tin, so they live in the fridge from delivery to service. Check the storage line and the date on every tin.

What is the difference between anchoas and boquerones?

Same fish, different product. Anchoas are cured in salt for months and packed in oil. Boquerones en vinagre are fresh fillets marinated in vinegar, white and mild.

What do grades 00, 0 and Extra mean?

They describe the size of the fillet. Grade 00 is the largest fillet, so a tin holds fewer of them; grade 0 is next; Extra is a smaller fillet, so the same tin holds more. A 420 g round tray holds about 44 fillets in grade 00, 50 in grade 0 and 64 in Extra.

Do you supply anchovies cured in Santoña?

Yes, as part of our range, as a separate product from the formats listed on this page. Each is supplied in its producer's certified packaging and label; availability and price are confirmed with your quote. To ask for one, choose Other premium origin in the quote form on this page and tell us which in the note.

Is there a minimum order?

The minimum per product line is 6 trays, tins or jars; 1 tub. Below the minimum, tell us in the note of the quote form what you need. We ship mixed pallets and less-than-pallet loads, so you can combine products in one order. Quantities and delivery terms are confirmed on your proforma.

Do you deliver across Ireland?

Yes. We supply trade customers across Ireland; the quote form asks for your Eircode. Northern Ireland and other UK postcodes are not covered. Delivery terms and the delivery date are confirmed on your proforma.

What is the shelf life?

Every pack carries its own use-by or best-before date. The shelf life of each format is on the product specification, sent with your proforma; ask us before you order if you need it.

How do I get a price?

Use the quote form on this page: this product is already selected. Choose the format, the quantity per delivery, how often and your Eircode, add a note if you like, and we email you a trade quote. You can add other products to the same quote. The firm price, delivery terms and date are confirmed on your proforma. Trade customers only.
